Bellini
Preparation
FILL a very cold mixing glass with ice, then empty and turn upside down to remove any water. Carefully POUR in the Prosecco then the the white peach purée. STIR very gently to retain the bubbles.
Setting
Served in a chilled flute or champagne glass.
