CEMOI's Sustainable Development Strategy (know as TRANSPARENCE CACAO) was developed by the Group CEMOI with the support of THE FOREST TRUST (TFT) organization, of which it is officially a member, which accompanies numerous companies on their sustainable development strategy concerning topics such as palm, soy, or wood. This strategy's three main points:

Empreinte Single Origin

CÉMOI has recently launched Empreinte, a couverture brand for pastry chefs and artisanal chocolatiers that uses single-origin beans from the controlled fermentation project. Improved fermentation methods, many which are borrowed and inspired by France's deep and enduring traditions within the wine industry, assist CÉMOI in giving the best of each origin's chocolate flavor.

CÉMOI's controlled fermentation initiative is part of their broader sustainability initiatives that covers 60,000 cocoa farmers throughout 100 cooperatives in Côte D’Ivoire, Ecuador and the Dominican Republic.

CÉMOI's Empreinte Line believes that collaborating with their end users is increasingly important.
