The blood orange is a variety of Mediterranean orange, fruit of the orange tree Citrus, with a pulp color which tends towards bright red. This coloration progresses inwardly as the fruit matures and is explained by the presence of anticyclonic, a type of pigment. Apart from a few red spots on its skin, its external appearance is similar to that of an ordinary orange. Thanks to wide variations in temperature and high exposure to sunlight, the Sicilian climate is just right for growing wonderful varieties of blood oranges. Ponthier has therefore selected balanced and tasty oranges, grown in wonderfully fertile land. The puree is “ fruit ready for use” which can be used as an ingredient in cocktails, fruit juices, smoothies, in desserts (fruit mousse, round jellies) in chocolates (fillings) and confectionery (fruit jellies, marshmallows, ...) in ice creams and sorbets. The puree, or fruit “pulp”, is made from fruits picked at maturity that are finely crushed and to which sugar may be added (approximately 10%). Purees are used as a substitute for fresh fruit, and offering practicality, time saving, food safety, cost control and consistent quality throughout the year. The finished product: tasting for each batch produced, guaranteeing a taste and a color identical to fresh fruit as well as a dense, smooth and homogeneous texture. **Must be kept in the refrigerator after opening and used within 3 to 5 days.
