Ingredients
Swiss Dream Strawberry
12 oz Swiss Dream Strawberry
16 oz Water
64 oz Whipped cream
White Sponge Cake Mix
32 oz White Sponge Cake Mix
20 oz Eggs
6 oz Water
Vanilla, to taste
Cake Decorating Paste
10 oz Powdered sugar
10 oz Butter
10 oz All purpose flour
10 oz Egg whites
Preparation
Swiss Dream Strawberry
Mix Swiss Dream Strawberry and water until Swiss Dream iscompletely dissolved. Add whipped cream (soft peak) fold together until completely mixed. Refrigerate for approximately2 hours.
White Sponge Cake Mix
Mix ingredients on high gear for 3-5 minutes. High speed to maximum volume. Place in sheet pan and bake into 1" thicklayers at 360°F for 25 minutes. Let cool.
Cake Decorating Paste
Mix ingredients until very smooth in machine and add food colorto it. When paste is ready, spread uniformly on silicone mat.Then use a comb scraper or universal comb to make a designin the decorating paste. Put in freezer for 5 minutes. Spread on white sponge cake 1/8" thick being careful not to smear thedecorating paste. Bake at 375°F for 10-12 minutes. Allow caketo cool. Place the sponge cake mix down on parchment paperand carefully remove the silicone sheet. Cut sponge cake mixwith provided cutter.
Setting
Cut sponge cake mix into strips ready to be put in the mould. Foreye appeal, place strips of soaked (Kirsch or Rum with simple syrup) sponge cake in the middle.
Decoration
Decorate as desired.
