Ingredients
Shiitake Sauce
1 oz Butter
1 oz Flour
2 tbsp Shiitake, dried, sliced, soaked
1 cup Water, hot
1 cup Shiitake stock
1 cup Chicken Stock, see below
1/2 tsp Coriander, ground
2 tsp Porto Rouge
Pepper, to taste
Hacomat, to taste
Chicken Stock
1 oz Chicken Base
2 qt Water, boiling
Preparation
Shiitake Sauce
Melt the butter, stir in flour and cook slowly for 2 to 3 minutes. Stir in Shiitake and chicken stock to make in smooth sauce, add Shiitake, Porto Rouge and seasonings. Simmer gently until thickened stirring frequently.
Chicken Stock
Dissolve Chicken Base in boiling water and stir.
