Schupf Noodles

Typical of Baden-Baden and the Baden-Wurttemberg state in southwestern Germany, schupf noodles (schupfnudeln) are a kind of spaeztle (homemade pasta) that gets its name from the German word 'Schupfen,' meaning 'to shove, push, throw or chuck.'

Sold under Swissco, Swiss Chalet’s proprietary brand, Schuf Noodles are imported from our manufacturer and partner in Germany. Only the best raw, natural ingredients (free of any genetic modification), are used to produce our noodles. They are made from daily fresh cracked cage-free eggs, potato flakes and the highest quality grains (Durum Semolina).

A simple and tasty delight, they go well with almost anything: roast pork, rack of lamb, duck, sauerkraut, and any cabbage dishes.

To prepare, simply boil in water for 20-25 minutes, drain, sauté with butter and season to taste.

A Recipe Idea: Roasted Duck Breast with Wholegrain Mustard, Fig Sauce and Schupf Noodles

Ingredients
Duck Breast
2 each Duck Breast
2 oz SCFF-Whole Grain Mustard
4 oz Menu-Fig Sauce-Salsafichi
1 cup Red Wine
1 oz Haco Swiss-Fond De Veau Lie
3 ounces Whole Butter (to finish)

Schupf Noodles
8 oz Schupf Noodles (dry weight)
3 oz Butter
1 oz Hacomat

Preparation
Duck Breast
Marinate the 2 duck breasts with the whole grain mustard, fig sauce , red wine and the Fond De Veau Lie for two hours. Place on a wire rack and roast in the oven for 20 minutes until medium rare or to desired temperature. Remove from oven and let sit for 10 minutes to prevent excess bleeding. Use the marinade to finish the sauce, bring to a boil and finish with the whole butter.

Schupf Noodles
Boil the schupf noodles for 25 minutes, sauté with butter and season with Hacomat seasoning.

Setting
Garnish with fresh figs and steamed broccoli or as desired.
