Ingredients
48 oz Raspberry Castello
5 qt Whipping cream
2 qt Egg whites, whipped
20 oz Raspberry Compound
Preparation
Two parts whipping cream. One part egg whites whipped with cream of tartar. Fold these two products together. Flavor with Raspberry Castello / Compound combination.
Setting
Put in molds (forms) and freeze. Serve directly from refrigerator to table. Can also be piped in chocolate cups, such as Victoria Cups or Hexagon Chocolate Cups and glasses.
Decoration
Garnish with fruit upon serving.
