Tropical Tiramisu



Ingredients
Lady Fingers
10 ea Yolks
5 oz Sugar
10 ea Whites
5 oz Sugar
5 oz All purpose flour
5 oz Cornstarch
1 oz Pineapple Compound

Tropical Royale Mix
1 lb 2 oz Croquant
10 oz Edelweiss 33%
8 oz Pistachio Compound

Filling
20 ea Yolks
20 oz Sugar
4 tubs Mascarpone
2 oz Pineapple Compound
20 ea Whites
6 oz Sugar
16 g Sheet Gelatin
2 oz Rum

Preparation
Lady Fingers
Whip yolks and sugar together at #3 speed for 10 minutes. Whip whites and sugar to medium peaks and fold into yolk mixture. Sift flour and cornstarch and fold into above mixture. Add Pineapple Compound.

Tropical Royale Mix
Melt Edelweiss 33% and mix in pistachio compound. Combine Croquant to Edelweiss 33%/Pistachio mixture.

Filling
Add yolks, sugar, Mascarpone and Pineapple Compound and cream together with paddle #2 speed for 5 minutes. Whip whites and sugar medium peak and fold into yolk/Pineapple mixture. Warm Sheet Gelatin and Rum together and fold into above mixture.
