Ingredients
10 g / .35 oz Butter
15 g / .53 oz Sugar
70 g /2.47 oz Sugar
4 ea Yolks
4 ea Whites
100 g / 3.5 oz Wheat starch
80 g / 2.8 oz Pineapple Compound
Preparation
Take butter and butter cake pan. Sprinkle buttered cake pan with sugar. Beat 70 grams of sugar and yolks together until fluffy. Beat egg whites until stiff. Layer wheat starch onto egg/ sugar mixture, alternating with stiff egg whites. Fold Pineapple Compound together.
Setting
Fill batter into piping bag with smooth attachment. Pipe finger-length strips onto baking sheet. Bake at 347°F/175°C for approximately 12 minutes.
