Mad Mac Macaroons


These delicate French cookies have a history dating back over 200 years. Recently they have been reinvented by chefs Florian Bellanger and Ludovic Augendrea in playful colors and delicious flavors, making a big entrance in the US. 

The first Macaroons were simple cookies, made of almond powder, sugar and egg whites. Not until the beginning of the 20th century did the Macaroon become a "double-decker" affair. Pierre Desfontaines, the grandson of Louis Ernest Laduree (Laduree Pastry and Salon de The, Paris) had the idea to fill them with a "chocolate ganache" and to stick them together. Since then, French Macaroon cookies have been nationally acclaimed in France and remain the best-selling cookie in pastry retail stores.
