Honey Beer Steamed Clams



Ingredients
Honey Beer Steamed Clams
8-12 oz  Honey beer, flat
36 lb  Manilla clams, cleaned
 Bercy butter, see below

Bercy Butter
3 lb  Butter, unsalted, softened
1 2/3 cup Parsley, fresh, coarsely chopped
1/3 cup  Shallot, finely chopped
1/3 cup  Garlic, finely chopped
1 tbsp  Thyme, fresh, coarsely chopped
3/4 cup  Honey
3/4 cup  White wine
1/3 cup  Lemon juice
1 tbsp  Orange zest
3 tbsp  Orange juice
1/2 tbsp  White pepper
1/2 tsp  Red pepper crushed

Preparation
Honey Beer Steamed Clams
Bring 1/2 cup beer to a boil. Add 1 1/2 pounds clams to beer and cover. When clams open, swirl in 1/3 cup bercy butter, remove from heat.

Bercy Butter
Beat together butter and remaining ingredients; reserve.
