Fresh Truffles, Imported from Italy


An earthy delicacy that is cultivated in the rich soils of Italy and France, the truffle is a highly sought-after ingredient in the gourmet kitchen.

We are proud to offer this unique product in fresh form, imported directly from Italy, in three varieties: Black Summer Truffle, Black Winter Truffle (Perigord) and White Truffle. Incorporate this esteemed product as shavings over your dishes, or paper-thin slices inserted into meats, under the skins of roasted fowl, in foie gras preparations, in pâtés, or in stuffings. And make these the “diamonds” of your kitchen.

The hollow faced “truffle hunter” sets off with his faithful dog, in the dark of the night, in search of precious tubers. These “diamonds” of the table can be found as far as half a meter underground, growing near oak trees, hornbeams and hazelnuts. It is from this rich soil that they gain their distinctive taste and aroma.


Black Summer Truffle
Origin: Italy | Available: May - August

Black truffles have a flavor that is far less pungent and more refined than that of their white cousins. It is reminiscent of fresh earth and mushrooms. When fresh, their scent fills a room almost instantly. This variety has a thicker skin than the Winter and White Truffles, and therefore keeps longer.

Black Winter Truffle (Black Perigord)
Origin: Italy & France | Available: November - March

The Black Winter Truffle, also known as the Black or Perigord Truffle, is rich in aroma and flavor. Its scent can be detected up to 20 inches underground by trained dogs that aid in its cultivation. The base recipe for black truffles is the classical “sauce all spoletina”, where the truffles are minced and added to warm, but not boiling olive oil, a touch of garlic, salt and pepper. They can also be added to stews and sauces and need longer heating to release their flavor.

White Truffle
Origin: Italy | Available: September - December

This rare and precious fruit of the earth is the premier truffle, often referred to as the “diamond of the table”. White truffles are generally served uncooked and shaved over steaming buttered pasta, light sauces, and salads.

STORING TRUFFLES: The best way to store truffles, and delay their ripening, is by wrapping them in paper towels in an airtight container; change the paper every day to absorb any condensation.
