Haco
Crawfish Bisque



Ingredients
1 gal  Lobster Bisque, see below
2 lb  Crawfish tails, peeled
1/2 cup  Pomace Olive Oil
1 ea  Onions, large, chopped
3 oz  Carrots, chopped
1 oz  Garlic, chopped
3 oz  Celery, chopped
3 oz  Bell pepper
1 cup  Dry white wine
3 oz  Brandy or Cognac
5 oz  Tomato Wizard
1 qt  Heavy cream
Parsley, chopped
Tarragon leaves, chopped
Hacomat, to taste
Black pepper, to taste

Preparation
In a sauce pan, sauté the onions, carrots, bell pepper and celery in the olive oil, add the crawfish tails and sauté for another 3 minutes. Add Brandy and white wine and simmer for 5 minutes. Add to Lobster Bisque. Bring to a slight boil. Simmer for 10-15 minutes. Lobster Bisque Stir contents of pouch into 3 quarts of hot water. Bring to boil, stirring constantly. Reduce heat and simmer for 5-7 minutes.

Setting
Garnish with chopped parsley and tarragon.
