Orange Sauce



Ingredients
2 lb  Demi Glace
2 1/4 gal  Water
1 gal  White wine
 Pan drippings, if available
1 1/8 gal  Orange juice
4 1/2 cup Orange rind, blanched, finely chopped

Preparation
Blend Demi Glace with water. Bring to boil, stirring constantly.Reduce heat and simmer for five minute, sitting occasionally.Combine wine, pan drippings, Brown Sauce, orange juice andrind. Simmer.
