Fennel and Tomato Soup with Shrimp



Ingredients
4 1/2 oz  Tomato Soup Mix
4 tbsp  Tomato Wizard
2 qt  Water
2 tbsp  Shrimp Base
3 tsp  Extra Virgin Olive Oil
2 cup  Onion, halved and sliced
4 ea  Fennel bulbs, large, halves, sliced
2 cups  Rice, cooked
2 ea  Bay Leaf
3/4 lb  Shrimp pieces
3/4 lb  Tomatoes, peeled, diced
2 tbsp  Fresh dill, sniped
Salt, to taste
Pepper, to taste

Preparation
Heat olive oil in a large saucepan over a medium heat. Add onion and fennel and cook for 3-4 minutes, stirring occasionally, until the onion is just softened. Add 1 1/2 quarts of water, Shrimp Base, and bay leaf and bring to a boil. Dissolve Cuisine Sante Tomato Soup in 1/2 quart of water and add to the soup. Cook until the fennel is tender during the last three minutes, add shrimp, diced tomato and rice.

Decoration
Garnish with fennel fronds.
