Ingredients
8 oz Powdered sugar
14 oz Butter, soft
1/2 tsp Salt
2 tsp Vanilla Extract
2 ea Whole eggs
1 lb 4 oz Cake flour, sifted
Preparation
Place the powdered sugar, butter, salt and Vanilla Extract in abowl with the paddle attachment and cream on medium speeduntil light and fluffy, about 5 minutes. With the machine runningin medium add the eggs one at a time. Stop the machine, scrapedown the bowl and continue to mix for 30 seconds more. Stop themachine and add the flour all at once. Mix on low speed just untilcombined. Transfer dough to floured sheet pan and refrigerate for2 hours or overnight.
Setting
Roll the dough out onto a floured work table to a thickness ofabout 1/8 of an inch. Cut out the cookies into the desired shapescutting a hole in the tops. Bake the cookies in an oven that hasbeen pre heated to 375°F for about 10 minutes or until they aregolden brown.
Decoration
Sandwich the cookies together with Bakbel Marmalade and dip in Ultra Gloss.
