Ingredients
12 oz Egg whites
14 oz Powdered sugar
2 oz Honey
Orange zest
1 ea Vanilla bean, split
11 oz Butter
5 oz All-purpose flour
6 oz Almond Flour
2 oz Cocoa Powder
Preparation
Place egg whites, powdered sugar, honey, Orange Zest, and VanillaBean in a bowl and warm over a double broiler. Stirring constantly.After the mixture is hand warm, mix on a low speed. Place butter in asaucepot and boil until it starts to change color. Pour utter unto a coolmetal container to chill down. Now add all-purpose flour, AlmondFlour and Cocoa Powder with the previously mixed ingredients. Thenincorporate the brown butter. Place batter in a container and chill forat least two hours.
Setting
Preheat oven to 400°F in conventional oven. Butter Madeleine moldsand fill up to 3/4 of it capacity. Place the molds in oven and turntemperature down by 25°. Bake about 12 minutes. Madeleines aredone when they are puffed up I the center and the interior is bakedout. Immediately take out of molds and serve with a sprinkle ofpowdered sugar.
