Ingredients
1 bx Cream of Chicken soupmix
2 qt Water, cold
3 gl Water, boiling
2 lb Onions, finely chopped
2 oz Oil or butter
3 oz Curry powder
3 ea Bay leaves
1 cup White wine
1 lb Rice, cooked
1 qt Cream of Half & Half
White pepper, to taste
Hacomat, to taste
Preparation
Reconstitute Cream of Chicken soupmix in 2 quarts of cold water. Add to 3 gallons of boiling water and bring to a second boil. While simmering for 20 minutes, add bay leaves and white wine. Sauté onions and curry powder together. Add curry/onion mixture and rice to prepared soup. Add cream to simmering soup. Season to taste with white pepper and Hacomat.
Setting
Garnish with parsley, pinenuts (freshly chopped), fruits and raisins.
