Lobster Mac and Cheese

YIELD: 100 SERVINGS


Ingredients
3 lbs Schupfnoodles, cooked, cooled
2 qts Haco Lobster Bisque
2 qts Haco Quattro Formaggi
4 cup Cheddar cheese, shredded
2 cup Shallots, minced
2 tbsp Butter
3 lbs Lobster meat, chopped, raw

Preparation
Prepare Lobster Bisque as per package instructions. Prepare Quattro Formaggi as per package instructions.

Cook Schupfnoodles for 20-30 minutes and cool. Sauté shallots in butter, add lobster meat and cook 2 minutes then add this mixture to noodles and fold together with both sauces. Portion into individual ramekins or 1 large pan, top with cheddar cheese and bake 30-40 min or until golden brown.

Variation: any seafood may be substituted and other cheeses may be used.
