Lobster Salad

Ingredients
Lobster Salad
500 g  Lobster, cooked 5 minutes, cleaned, deshelled
Treviso salad, couple of leaves, julienne
Raw fennel, couple of leaves
1 ea  Hard boiled eggs, cut in quarters
10 ea  String beans, cooked for 10 minutes
1 ea  Tomato skin, to make rose decoration

First Sauce
60 g  Mayonnaise
1 tsp  Chives, finely chopped
1 tbsp  Parsley, chopped
1 tbsp  Coriander, chopped
1 tbsp  Tarragon

Second Sauce
60 g  Oil
30 g  Balsamic Vinegar
1 tbsp  Basil, chopped
Salt, to taste
Pepper, to taste

Preparation
First Sauce
Combine all these herbs with the mayonnaise.

Second Sauce
Combine all ingredients.
