Ingredients
2 qt Milk
13 oz White Roux
1 tsp Dijon Mustard
1 tsp Honey
1/2 cup Guinness Stout
1 cup Cheddar cheese, grated
Salt, to taste
Pepper, to taste
Preparation
Blend White Roux into boiling milk, stirring well with a whisk. Bring to a boil again and simmer for 1 minute, stirring occasionally. Stir in Dijon Mustard and honey and finally the Guinness Stout. Cook this mixture fairly rapidly for 2 to 3 minutes then add grated cheese and stir over very low heat only until all the cheese has melted.
Setting
Spread mixture thickly on four slices of toast and brown under the grill.
