Max Felchlin AG of Schwyz (Switzerland) is one of the
only manufacturers in the world that still produces chocolate through
traditional methods. Great care is taken to provide authentic quality,
using slow processing, to protect the aromas of the beans and lead to a
unique result of high quality. Felchlin’s Grand Cru line, and the newly
released Cru Sauvage product, are the pinnacles of fine chocolate.
Felchlin’s
Arriba, Madagascar, and Maracaibo varieties are all derived from the
Criollo bean; a rare chocolate bean that is intense in flavor and
considered to be the best of the best. All varieties are sensually
accented with the aroma of coffee, roasted hazelnuts, wild berries,
orange blossom, and cinnamon. Although Felchlin offers premium
varieties of chocolate for discerning chefs, they also provide an
outstanding midline product for diverse applications. Their line of
pastry products extends to chocolate coatings, giandujas, cream
fillings, toppings and decorations: a complete selection of specialty
ingredients for the pastry workshop.
