Cranberry Almond Croquette Stuffing

YIELD: 16 SERVINGS


Ingredients
4 cups Potato Croquette Mix
1 cup Onions, diced
1 cup Carrots, diced
1 cup Turnips, diced
1 cup Cranberries, dried
1/2 cup Almonds, sliced
2 cups Chicken Stock
Hacomat, to taste
Pepper, to taste
1 tbsp Thyme, fresh
2 tsp Olive oil

Preparation
Place the diced vegetables in a sauté pan and sweat 3- 5 minutes. Add the Chicken Stock and let simmer 5- 7 minutes until tender. Place the Potato Croquette Mix in a large bowl. Add the cranberries, almonds, salt and pepper. Pour the vegetable and stock mixture into dry ingredients and mix well. Add fresh herbs and continue mixing until all are blended together. This can be stuffed into a chicken, turkey, pork chop, etc. and baked.

Setting
Serve as desired.
