Ingredients
2 lbs Beef short ribs
4 oz Demi Glace Classique
1 oz Beef Base
2 qt Water, hot
1 cup Shallots, sliced
2 oz Rosemary, fresh
½ cup Red wine
1 tbsp Olive oil
Preparation
Place oil in a large skillet, dust short ribs in Demi Glace Classique powder and brown in skillet on all sides. Add shallots. Cook till golden brown, deglaze with red wine and let reduce to ausec. Add Beef Stock and rosemary, then cover and bake at 400 F for 2 hours or until ribs are fork tender.
Setting
Remove ribs and serve immediately.
