1000 g / 35.5 oz Chocolate Sponge Mix
1200 g / 42 oz Whole egg
150 g / 5.3 oz Sugar
100 g / 3.5 oz Water, cold
Banana Swiss Dream
340 g / 12 oz Swiss Dream Neutral
460 g / 16 oz Banana Purée, warm
2740 g / 96 oz Whipped cream, soft peak
Preparation
Chocolate Sponge #2
Whip Chocolate Sponge Mix with remaining ingredients for 4 to 6 minutes on high speed. Put on baking paper on baking tray. Place batter on baking tray (40 x 60 cm). Bake at 210-220°C/ 410-428°F for approximately 5 minutes.
Banana Swiss Dream
Mix Swiss Dream Neutral with warm Banana Purée until completely dissolved. Fold mixture in whipped cream (soft peak) and mix until completely folded together.
Setting
Spread the Banana Swiss Dream over the Chocolate Sponge Cake. Roll the Chocolate Sponge Cake and refrigerate. Cut to desired width.
