Orange Cranberry Chutney

Ingredients
1 tbsp  Vegetable Oil
1/2 ea  Onions, Diced
1 tbsp  Fresh ginger, minced
1 ea  Orange zest, grated
4 oz  Sugar
8 oz  Orange Marmalade
2 oz  Golden raisins
4 ea  Dried figs, medium dice
4 ea  Dried apricots, medium dice
1/2 tsp  Ginger, ground
1/8 tsp  Ground cloves
Salt, pinch
Cayenne pepper, pinch
12 oz Cranberries, fresh
Apple Juice, as needed
1 ea  Orange Segments

Preparation
Sweat the onion and ginger in the oil until translucent. Addorange zest, sugar and Orange Marmalade and stir untilcompletely combined. Add dried fruit and the spices and cookon low heat for 10 minutes. Add the fresh cranberries andcook until tender, or they just begin to pop. Remove the potfrom the heat and allow the chutney to cool. Once cool thinthe chutney down to the desired consistency with the applejuice and fold in the orange segments.
