Ingredients
1 bag Potato Croquette Mix
2 1/2 qt Water, cold
1/3 Cream puff paste
1/2 cup Mint leaves
Preparation
Mix Potato Croquette Mix with water and allow to set for 5 minutes. Stir dough until smooth and easily removable from bowl. An electric batter mixer can be used. Add cream puff paste and mix well. Add a half cup of mint leaves to Potato Croquette Mix.
Setting
Shape quenelles. Bake at 375°F until golden brown. Great with lamb!
