Caribbean Vegetable Soup

Ingredients
2 ounces Butter or Margarine
2 cups Onion, chopped
2 Tbl Garlic cloves, crushed
4 ea Carrots, sliced
9 oz Haco Vegetable Soup mix
1 1/2 quarts Water
2 Tbl Haco Vegetable Base
4  Bay leaves
2 Tbsp Springs of fresh Thyme
2 Celery stalks, minced
3 Green bananas (or green plantains)
(Or ripened plantains for sweeter taste)
Peeled and sliced into 1/8"thick
3 cups Yam, cubed
1/4 cup Red lentils
2 ea Chayote, peeled, chopped
Ground pepper, to taste

Preparation
Melt the butter. Add onion, garlic and carrots and sweat for a few minutes, stirring occasionally, until they begin to soften. Add the water, Vegetable base, bay leaves, and thyme and bring to a boil. Add the Haco Vegetable soup mix. Add the celery, green bananas, yam, lentils and chayote. Simmer for 15 minutes, or until all the vegetables are cooked.

Garnish
Garnish with chopped scallions and fresh ground pepper.
