Multigrain Bread Rolls

Ingredients
6 lb  Bread flour
4 lb  Multigrain mix
4 oz  Yeast, dry
3 qt  Water
6 oz  Rustica Swiss

Preparation
Mix bread flour, Multigrain mix, yeast, water and Rustica Swiss together for 12-15 minutes or until dough is clear from the bowl. Let dough rest one hour. Weigh off dough. Rest, form, proof, bake.

Variation
Add 10 ounces to walnuts, finely chopped.
