Ingredients
Squash Bisque
1 lb Butternut squash, small, peeled, seeded, sliced
1 ea Stalk celery, sliced
1 ea Apple, medium, peeled, sliced
1 ea Potato, small, peeled, sliced
1 ea Onion, small, sliced
1 ea Carrot, medium, scraped, sliced
1/4 tsp Whole oregano, dried
1/4 tsp Whole rosemary, dried
14 1/2 oz Chicken Base, see below
3/4 cup Skim milk
Chicken Base
1 oz Chicken Base
2 qt Water, boiling
Preparation
Squash Bisque
Combine ingredients in a large Dutch oven except for the skim milk, cover and simmer 20 to 30 minutes or until vegetable are tender. Spoon half of vegetable mixture into container and with an electric blender, process until smooth. Repeat procedure with remaining vegetable mixture. Return puréed mixture to Dutch oven, stir in skim milk. Cook over low heat, stirring constantly, until mixture is thoroughly heated.
Chicken Base
Dissolve Chicken Base into boiling water and stir.
